I made a beef/turkey chili with sweet potato not so long ago and it was delicious, so I can imagine this white chicken with potatoes is really tasty as well. Looks and sounds just right for colder weather.
Okay, so I really wanted to put up a recipe for gluten-free enchiladas. I grew up loving the chicken enchiladas that my mom made, but they are definitely not gluten-free or really all that healthy because of the cream of chicken soup.
I also love how there are white beans in these, so there is something inside the tortillas besides just chicken and sauce. The white beans not only add texture and volume, but they also add a healthy, low-fat protein and make them more like beef enchiladas.
Thank you for this recipe! We LOVE these enchiladas. I did make some minor tweaks. I use 2 cups beans and about 1 lb cooked chicken and the. cut the amount of cream cheese in half. This recipe makes 20 enchiladas for me using corn tortillas.

Simple chili recipe with good flavor! I keep the spices the same as the recipe because I am not the adventurous type. I add either sweet potatoes or carrots for a little extra texture and substance. I just made it for a fourth time and added frozen corn. I like the balance of spices which is what I keep the same every time
I loved the chili, and I have made chili for the last 45 years! The only thing I changed is that I used half chipotle chile powder half regular chile powder, did not add the sugar, and used half the beans. I doubled the recipe and gave half to my housekeeper. She loved it too!

Celina I don't know the answer to your question. Next time I make this I will measure and include the info in this post. I'll try to make an estimate for you based on all the different elements: 1 pound of black beans cooked is 5-6 cups. Plus I'd guess there's about 8 cups of meat here. Plus 2-4 cups of chicken broth. My best guess is this recipe makes about 16-18 cups of Feijoada. Best of luck with your International Food tasting!

This is the best recipe I have ever tried. I had a little more than 2 cups chicken, so I thinks I will save some of the Rotel juice to thin it a little. Fixed Mexican Cabbage Salsa and refried beans with it. I was a hero tonite!!
Yummiest enchiladas ever.The mix of green chiles and cream cheese was FANTASTIC. I think I may have started a war at my boyfriends house between who gets the last ones lol.
