I always make at least two batches of both chocolate and peanut butter fudge during the holidays. The chocolate can be made with or without pecans, depending upon your choice. I prefer it without the nuts, but a lot of my family want the pecans added.

Hi Kimberly, Adding extra peanut butter will change the ratio of wet to dry ingredients, changing the texture of the fudge. In that case, it might not set properly. You can leave the crushed peanuts out if you like. They just add crunch and extra flavor.
Hi Gayla, I'm not sure what could be happening. Are you using a commercial brand of smooth peanut butter? Crunchy peanut butter has less liquid when melted because the chunks of peanuts take up space. The only other thing I can think of is measuring the confectioners' sugar by weight.
Hi Stella, yes the melted butter provides the liquid (along with the melted peanut butter) for the sugar to dissolve in. The fudge is on the thicker side before pressing into the pan (see the above photo). Even using margarine and natural peanut butter can negatively affect the consistency and setting of the fudge, so I'm not sure how vegan butter would turn out.

The fudge-making process works best if you put the marshmallow fluff and peanut butter into bowls (as pictured above) before adding them to the milk/sugar mixture. That way you can add them quickly and make sure everything melts together without separation.
Hi Allyson, I'm so glad you like this fudge recipe! I don't think the peanut butter can be substituted for chocolate chips directly, since chocolate chips will be hard when they cool down after being melted, while peanut butter is buttery. You might need to add a little bit more milk or marshmallow creme if using chocolate chips, but I am not sure exactly how much without testing it out myself.
I just made this recipe and this fudge is just so yummy. I used crunchy peanut butter instead of creamy because I like some nuts in my fudge and it turned out perfect. Thank you for a great easy to make recipe.
*The soft ball stage is a test to see if the fudge has been cooked to the proper stage. Before you start cooking, fill a small dish with ice water and set aside. After you have brought the recipe to a full boil for 3½ minutes, dribble a few drops of the mixture into the ice water from a wooden spoon. After it cools in the water (about 10 seconds), you should be able to roll it into small ball with your finger tips. If you put it in your mouth, it will be slightly chewy. If it passes these tests, you are done and should remove the mixture from heat and add the remaining ingredients. Otherwise, cook for another 30 seconds and try the test again. Most of the time, cooking time will not exceed 5 minutes.
Next, in a medium pan, stir together the sugar and the milk. Over medium-low heat, bring the mixture to a boil. Continue to boil for 2 ½ minutes, stirring continuously to prevent sticking. Finally, remove from the heat, stir in the peanut butter and the vanilla until smooth. Pour peanut butter fudge into your prepared pan and allow it to cool.
I made this one for the first time and my go-to one (powdered sugar, butter, and peanut butter) as well. I am bringing them both to work and have a peanut butter fudge taste test. Excited to see the results.

As you stir the mixture, it will thicken up, which Latimer says is another sign that it is almost time for you to add the peanut butter and marshmallow. After stirring for three minutes, add the marshmallow, peanut butter, and vanilla extract to the mixture, and stir vigorously to incorporate. You may want to use a silicone spatula or wooden spoon for this task, as a metal spoon might become way too hot to handle during the process, according to Eat This, Not That!. Whatever tool you use, you only need to stir the fudge enough to make sure the marshmallow, peanut butter, and vanilla extract thoroughly combined with the sugar mixture.
